Chef’s Tweezers vs Tongs: What’s the Difference?
Sep 27, 2026
Chef’s tweezers and kitchen tongs both grip food, but they are designed for different scales of work: tweezers favour close precision, while longer tongs give more reach for cooking and plating.
What is the difference between chef’s tweezers and tongs?
The main differences are length, working distance and the size of the food you want to control. Short chef’s tweezers sit close to the fingertips, which makes them useful for precise preparation. Longer tongs move the hand farther from the food and are better when reach matters.
The SUWADA Japanese Chef’s Tweezers are 105 mm long. By comparison, the Yoshikawa Saibashi Tongs are 250 mm long, and the Moribashi Tongs are 180 mm long.
When should you use chef’s tweezers?
Choose short chef’s tweezers for close-up jobs where you want a firm, narrow pinch near your fingertips. Typical uses include:
- removing fish bones;
- detailed fish and seafood preparation;
- removing stems or potato sprouts;
- gripping small or delicate ingredients;
- small adjustments where broad tongs feel too bulky.

When should you use longer kitchen tongs?
Longer tongs are useful when the job happens farther from your hand. Saibashi-style tongs are designed for cooking, deep-frying and detailed handling with extra reach. Moribashi-style tongs are shorter than saibashi but still give more reach than compact tweezers and are oriented toward precise placement and plating.

Are plating tweezers the same as tongs?
Not always. Kitchen-tool names overlap. Some long precision tools are sold as tweezers, while others use a tong mechanism. The more useful distinction is how the tool works in your hand: compact tweezers prioritise close control; longer tools prioritise reach.
Which SUWADA tool fits which job?
| Tool | Length | Best suited to |
|---|---|---|
| Chef’s Tweezers | 105 mm | Fish bones and close, detailed prep |
| Moribashi Tongs | 180 mm | Precise placement and plating |
| Saibashi Tongs | 250 mm | Cooking, deep-frying and long-reach handling |
Which should you choose?
Choose chef’s tweezers when you need close precision. Choose longer tongs when you need reach. If your main task is removing fish bones, the compact chef’s tweezers are the more direct fit. If you work over a pan or fryer, Saibashi give substantially more working distance. For careful plating with intermediate reach, Moribashi sit between the two.
