A well-made Japanese kitchen knife can remain useful for many years or even decades. There is no fixed expiration date.
Sharpening slowly removes steel
Every sharpening removes a small amount of material. Sensible maintenance can preserve the blade for a very long time, while unnecessary aggressive grinding shortens its life.
Thinning becomes part of long-term maintenance
As repeated sharpening moves the edge upward into thicker steel, the knife may need thinning to restore cutting geometry.
Corrosion can shorten blade life
Surface patina is normal on carbon steel, but deep rust and pitting remove material and can weaken the edge area.
Chips and broken tips are often repairable
Small damage can frequently be ground out, though every repair removes some steel and may alter the profile.
Handles can often be repaired or replaced
A worn or damaged handle does not necessarily mean the blade has reached the end of its life.
When is a knife truly worn out?
Usually when too much blade height or useful geometry has been lost, severe corrosion has damaged the blade, or repair is no longer practical.
