How Do You Grate Fresh Wasabi?

Fresh wasabi is grated into a very fine paste, traditionally with a dedicated wasabi grater, using gentle circular motion. Grate only a small amount shortly before serving, because the aroma and pungency change after the rhizome is grated.

How to grate fresh wasabi

  1. Rinse and clean the wasabi rhizome.
  2. Trim the end to expose a fresh flat surface.
  3. Hold the rhizome against the grater.
  4. Grate gently in small circular motions until a fine paste forms.
  5. Collect the paste and use it soon after grating.

The Wasabi Company and Wasabi Essentials both recommend a fine grater and circular motion for fresh wasabi.

Why does wasabi need such a fine grater?

The goal is not to make coarse shreds. Fresh wasabi needs to be broken down into a paste. The Wasabi Company explains that the grating action breaks down cell walls so the compounds responsible for wasabi’s characteristic aroma and pungency can react.

Do you need a sharkskin grater?

No. Sharkskin is traditional, but fine ceramic and stainless-steel surfaces are also used. The important distinction is that the surface must be fine enough to create a paste rather than coarse shreds.

Can you use a stainless-steel wasabi grater?

Can you use a Microplane?

How do you clean a wasabi grater?

Rinse it promptly so paste does not dry into the fine surface. For the SUWADA/Prince graters, use warm water and avoid the dishwasher.
