Bonsai trees are "trained" using wire.
To reach the desired shape a gardener will add enough wire around the branches and then use a couple of pliers to bring the branch into position.
In terms of size, the difference of jin pliers is mostly about your preference.
Both large and small jin pliers will bend thick wires. If you are adjusting thick branches, then the larger one is the better choice.
The head and the handle are bent making it easy to turn in your palm if you want to remove the bark of the tree to create a jin.
