No, not for most kitchens. A Sujihiki can replace a chef’s knife for long slicing tasks, but its narrow blade is poorly suited to general chopping, herbs and everyday vegetable preparation.
Where is Sujihiki better?
Large roasts, ham, brisket, boneless fish and other long slicing jobs benefit from its reach and low blade height.
Where does it fall short?
The blade gives little knuckle clearance on the board. Repeated chopping, mincing herbs, dicing onions and moving cut ingredients are less comfortable.
Can it portion raw meat?
Yes. Boneless meat is one of its strengths, especially when clean, even slices are the goal.
Can it do detail work?
Some tip work is possible, but the long blade is less convenient than a Gyuto or Petty for close trimming.
What is better for a one-knife kitchen?
Gyuto is usually the stronger one-knife choice because it covers vegetables, herbs, meat, fish and general board work more comfortably.
