What Are Saibashi? Japanese Cooking Chopsticks Explained

Saibashi are long Japanese cooking chopsticks used to stir, turn, lift and arrange food while cooking. Traditional saibashi are usually longer than eating chopsticks so the cook’s hands stay farther from heat. They are commonly associated with cooking tasks such as simmering, sautéing and frying.
What does “saibashi” mean?
Saibashi (菜箸) is the Japanese term commonly used for cooking chopsticks. Kikkoman describes saibashi as long cooking chopsticks, typically around 30 cm, used for jobs such as mixing, dressing food and stir-frying.
How are saibashi different from eating chopsticks?
The biggest difference is purpose and length. Eating chopsticks are designed for bringing food to the mouth. Saibashi are kitchen tools, so they are generally longer and intended for handling food over pots, pans and hot oil.
A study published by the Japan Society of Cookery Science also examined saibashi for simmering, sautéing and frying, and found that longer chopsticks were particularly useful for high-heat cooking because they kept the hands farther from the heat.

Are all saibashi traditional chopsticks?
No. The traditional tool is a pair of long cooking chopsticks, but modern products can adapt the same long, narrow working form into a tong mechanism.
