What Santoku Size Should You Choose?

Most santoku knives are around 165–180 mm, and both sizes work well for general home cooking. The choice is mainly about how much reach you want while keeping the compact character that makes a santoku useful.
165 mm santoku
A 165 mm blade feels quick and controlled on small or medium cutting boards. It suits cooks who value compact movement and rarely need long slicing strokes.
170 mm santoku
Many Japanese makers sit between the two common reference sizes. Around 170 mm gives a balanced middle ground and is especially common in everyday multipurpose knives.
180 mm santoku
A 180 mm santoku gives a little more edge length for onions, cabbage, larger vegetables and portions of meat or fish. It still feels noticeably shorter than a typical 210 mm gyuto.
Does hand size determine santoku length?
Not by itself. Board size and the food you cut are usually more useful. A tall santoku also gives good knuckle clearance even though the blade is relatively short.
When should you choose a gyuto instead?
If you consistently want more reach than 180 mm, a gyuto is probably the more natural shape. It adds blade length and a more pronounced point rather than stretching the santoku beyond its compact role.
Simple rule
Choose 165–170 mm for maximum compactness; choose 180 mm when you want slightly longer cuts but still prefer a santoku over a chef’s knife.
