When Should You Replace a Cutting Board?

Replace a cutting board when wear or damage makes it difficult to clean properly or use safely.
Deep hard-to-clean grooves
Knife marks are normal. The problem is when grooves become deep enough to trap residue and resist normal washing.
Cracks or splits
Cracks can hold moisture and food debris and may continue to spread, especially in wooden boards.
Severe warping
A board that rocks or no longer sits securely on the counter can become a cutting hazard.
Loose laminations or joints
If a laminated wooden board begins separating, stop using it until it is properly repaired or replaced.
Heavily scarred plastic
Plastic boards also wear out. Deep scoring that is difficult to clean is a reason to replace them.
Can a wooden board be resurfaced instead?
Sometimes. A sound board with surface wear may be flattened or resurfaced, provided cracks, contamination or structural failure are not the underlying problem.
