Why not grind only one side?
Removing too much from only the edge can raise the tip dramatically; removing too much from the spine can change the blade's visual line. Good repair balances both.

The bigger the missing section, the more the profile, blade height and cutting behaviour may change after repair.
Can you do it at home?
