Yes. Plastic cutting boards can release microplastic particles during chopping. A 2023 study measured particles released from both polyethylene and polypropylene boards as knives repeatedly contacted the surface.
Why are particles released?
Knife contact abrades the board. Small fragments can detach from the cutting surface as the board accumulates wear.
Do all plastic boards release the same amount?
No. Material, chopping style, board condition and how the knife contacts the surface all affect abrasion.
Does this prove a health risk?
