Wood vs Plastic Cutting Boards for Japanese Knives

For Japanese kitchen knives, a suitable wooden cutting board is usually the better default. Plastic boards can be practical and hygienic when maintained correctly, but wood is generally more forgiving on fine edges and avoids plastic abrasion in direct food contact.

Which is easier to clean?

Plastic is nonporous and often easy to sanitize. Wooden boards can also be used safely when washed, dried and replaced when badly worn.

What about microplastics?

Research has measured microplastic release from polyethylene and polypropylene cutting boards during chopping. That establishes a route of particle exposure, not a proven disease outcome.

Is plastic unsafe?

That conclusion is not supported. Food-safety authorities still describe important uncertainty around the health effects of dietary micro- and nanoplastics.
