Does Aogami Steel Rust?

Yes. Aogami can rust. It is a reactive high-carbon alloy steel, not a stainless steel, so moisture, salt and acids can cause corrosion.

How quickly can it rust?

That depends on humidity, food, surface finish and how long the blade stays wet. There is no fixed safe time.

Is a patina the same as rust?

No. A grey, blue or dark patina is a normal reaction layer that develops on reactive steel. Orange, rough or powdery corrosion is active rust.

How do you prevent rust?

Wash the blade after use, dry it immediately and do not leave it in a wet sink or damp sheath. Pay extra attention after citrus, onions and other acidic foods.
