How Long Does an Aogami Edge Stay Sharp?

There is no reliable universal number of days, weeks or months for an Aogami edge. Steel grade matters, but the finished knife and how it is used matter just as much.

Heat treatment

The same steel can behave differently depending on hardness and the quality of heat treatment.

Edge geometry

A thin acute edge cuts very easily but can lose its ideal finish differently from a thicker, more conservative edge.

What you cut

Soft vegetables are easier on an edge than dense squash, hard crusts, joints or accidental contact with bones.

Cutting board

Wooden boards are generally kinder to a fine edge than glass, stone or metal surfaces.

Technique

Twisting, scraping sideways and striking hard material can degrade or chip an edge far faster than normal slicing.

When should you sharpen?

Sharpen when the knife no longer performs cleanly for your normal tasks. Light touch-ups before the edge becomes very dull remove less steel and take less time.
