Japanese Knife Finishes: Nashiji, Kurouchi, Tsuchime & Migaki

Nashiji, Kurouchi, Tsuchime and Migaki describe the surface finish of a Japanese knife, not the core steel or cutting geometry. A finish changes appearance and surface texture, but it does not by itself tell you how well the knife will cut.

Nashiji

Nashiji means a pear-skin-like texture. The surface has a fine mottled or textured appearance that can come from the forging and finishing process.

Kurouchi

Kurouchi is the dark rustic finish associated with forge scale or a blackened forge-finished surface left on part of the blade. The exact look and durability vary by maker and process.

Tsuchime

Tsuchime means hammered. Repeated hammer marks create visible dimples across the blade face.

Migaki

Migaki is a polished finish, ranging from a clean satin-like polish to a brighter surface depending on the maker.

Do textured finishes stop food sticking?

Surface texture can influence food release, but there is no guarantee. Blade geometry, thickness behind the edge, food moisture and cutting technique often matter more than the finish name.

Do finishes change maintenance?

They can change how scratches, moisture and patina appear. Textured areas should still be dried carefully. A finish does not turn carbon steel into stainless steel.

Which finish is best?

Choose primarily by knife geometry, steel, maker and intended use. Treat finish as an aesthetic and surface-treatment preference rather than a performance ranking.
