Single-bevel knives are precise specialist tools, but they ask more from the user than most double-bevel kitchen knives.

They are handed
A right-handed blade and a left-handed blade are ground differently. That can reduce choice and make sharing the knife awkward.
They can steer in the cut
The asymmetric geometry naturally guides the blade sideways. Experienced users can use that behaviour deliberately, but beginners may find it frustrating.
Sharpening is more specialised
You need to preserve the wide bevel, shinogi line and ura. Treating the knife like a normal V-edge can damage the geometry.
They are less universal
Many single-bevel knives are designed around a narrow group of tasks rather than general chopping and all-purpose prep.
Maintenance mistakes matter more
Over-grinding the back or changing the bevel shape can be difficult to correct later.
They may not suit shared kitchens
Handedness and technique make them less convenient when several people use the same knife.
When are these trade-offs worth it?
When the specialised cutting behaviour matches the task and the user is willing to learn the geometry.
