What Grind Size Should I Use for Pour-Over Coffee?

Quick answer: For many one- and two-cup pour-over recipes, a medium-fine to medium grind is a sensible place to start. Then adjust from there using two things together: how the coffee tastes and how the brewer drains.

If the brew runs very quickly and tastes thin, weak or sharply sour, try grinding finer. If it drains very slowly and tastes dry, rough or astringent, try grinding slightly coarser. If the coffee tastes excellent, do not change the grind simply because somebody else's recipe uses a different setting or finishes at a different time.

The important point is that there is no universal pour-over grind number. Grinder settings are not standardised, and even grounds that look similarly sized can contain very different mixtures of fine and coarse particles.

Should pour-over coffee be coarse or fine?

Usually neither extreme.

Pour-over coffee is commonly ground finer than coffee for a long immersion brew such as a French press, but much coarser than a typical espresso grind.

That still leaves a large useful range.

Terms such as:

  • medium-coarse
  • medium
  • medium-fine

are helpful as visual starting points, but they are not precise measurements.

A good starting point for a typical small cone brewer is often somewhere around medium-fine. A larger dose or deeper bed may work better a little coarser. A fast-flowing paper or relatively open brewer may allow a finer grind than a slower paper or more restrictive setup.

The correct answer is therefore not a single texture. It is the grind that gives your particular coffee, grinder, brewer, filter and recipe a balanced cup with repeatable flow.

Why is there no universal pour-over grind size?

Because the grinder setting is only one part of a system.

The same nominal grind can behave differently when you change:

  • grinder
  • coffee
  • dose
  • filter paper
  • brewer geometry
  • pouring technique
  • water temperature
  • coffee-to-water ratio

Even two people using the same model of brewer can need different grind settings if their grinders produce different particle distributions.

This is why copying another person's grinder number can be a useful starting clue but not a universal recipe.

If one grinder uses “20 clicks” and another uses “20 clicks”, those numbers have no shared physical meaning unless the grinders happen to use the same adjustment system and calibration.

What does grinding finer actually change?

Grinding finer changes at least two important things at the same time.

1. It changes how easily coffee can extract

Smaller coffee particles provide more surface area relative to their mass and shorten the distance that dissolved material must travel from inside the particle.

All else being equal, a finer grind can therefore make extraction easier and faster.

2. It changes how easily water can flow through the bed

Smaller particles also create smaller spaces between coffee grounds.

That increases resistance to water flow.

So when you grind finer, a pour-over will often drain more slowly as well as extract more readily.

Those two effects are connected, but they are not identical. A longer brew is not automatically a better-extracted brew, and a shorter brew is not automatically under-extracted.

Uneven flow, bypass, filter resistance and the distribution of particle sizes can all complicate that simple picture.

Grind size is really a particle-size distribution

A grinder does not produce thousands of identical pieces of coffee.

It produces a distribution.

There may be:

  • a large population near the intended grind size
  • some much larger fragments
  • many smaller particles known as fines

That means two grinders can produce grounds that look similarly “medium-fine” while behaving very differently in the brewer.

One might create a relatively compact distribution around the target size. Another might create both many very small particles and a broad tail of much larger pieces.

The first and second brews can then differ in:

  • drawdown time
  • permeability
  • extraction
  • clarity
  • strength
  • taste

This is why a single average particle size does not fully describe a grind.

For practical brewing, the whole distribution matters.

Are fines always bad for pour-over?

No.

Fines are a normal result of grinding roasted coffee.

They can contribute substantially to extraction because of their high surface area.

The problem comes when the overall particle distribution, coffee-bed structure and brewing technique combine to create excessive or uneven resistance.

Very small particles can settle into spaces between larger particles. During brewing, some can also migrate lower in the coffee bed or towards the filter.

That can make a brew progressively slower.

But “fewer fines” is not a complete measure of grinder quality. A grinder that creates fewer fines but many very large fragments is not automatically better. Those large particles can also extract very differently from the rest of the bed.

The more useful question is:

Does this grinder produce a particle distribution that gives me repeatable flow and good-tasting coffee?

A practical starting point by setup

The table below is a starting guide, not a universal specification.

How to dial in pour-over grind size

The fastest way to find the right grind is to hold the rest of the recipe steady and make small changes.

Step 1: choose a repeatable recipe

Keep the same:

  • coffee dose
  • water amount
  • brewer
  • filter
  • water temperature
  • pouring pattern

Step 2: begin around medium-fine to medium

For a normal one- or two-cup pour-over, this is usually a sensible starting region.

Step 3: brew and taste

Do not judge the grind by drawdown time alone.

Ask whether the cup is:

  • sweet
  • clear enough for your preference
  • balanced
  • pleasantly strong
  • free from harsh dryness or hollow weakness

Step 4: look at the flow

Did the water race through unusually quickly?

Did the brew begin normally and then stall?

Was the drawdown slow but steady?

Was the final cup good despite the unusual time?

These observations help separate grind problems from filter, agitation or brewer problems.

Step 5: make one small adjustment

If you think the grind is the problem, move only a small amount finer or coarser.

Then repeat the same recipe.

Why can the same grinder setting behave differently with a new coffee?

Because different coffees do not necessarily fracture in the same way.

Roast development, physical structure, density and other characteristics can change the distribution produced by the grinder.

You can therefore keep the dial in exactly the same position and still get a different mixture of particle sizes from a new bag.

If the new coffee suddenly drains much more slowly or quickly, do not assume your technique has failed.

Keep the recipe steady, make a modest grind adjustment and taste again.

This is more reliable than assuming that a coffee from a particular country or processing method must always need a particular grind.

Should light and dark roasts use the same grind?

Not necessarily.

A common practical pattern is that lighter-roasted coffees often tolerate—or benefit from—more aggressive extraction, which can include a finer grind and hotter brewing water.

Darker-roasted coffees are generally easier to extract and may taste better with a somewhat coarser grind, lower temperature or gentler recipe.

But this is a starting tendency, not a universal rule.

Taste the coffee in front of you.

If a dark roast tastes balanced at a fine grind, there is no need to make it coarser simply because it is dark. If a light roast becomes harsh or astringent when pushed finer, back off.

Does a larger dose need a coarser grind?

Often, but not automatically.

Increasing the dose usually creates a deeper coffee bed.

A deeper bed gives water a longer path through the grounds and normally increases resistance.

If you double the coffee dose but keep the same brewer and grind, the brew may become substantially slower.

That is one reason recipes do not always scale perfectly by multiplying every ingredient.

A larger brew may need:

  • a slightly coarser grind
  • a different pouring pattern
  • a larger brewer
  • a different target brew time

Again, use taste and flow together.

Does brewer shape determine the grind size?

Brewer geometry matters, but simple rules such as “cone brewers always need finer coffee” are too broad.

Flow depends on more than cone versus flat-bottom.

It also depends on:

  • bed depth
  • filter paper
  • support ribs or wires
  • wall contact
  • outlet size
  • available filter area
  • air escape
  • pouring technique

That means two brewers using similarly shaped papers can still require different grind settings.

An open wire dripper, for example, should not be assumed to behave like a solid-wall brewer simply because the paper has the same general shape.

Does agitation change the grind you need?

Yes.

Swirling, stirring and the water jet itself move coffee particles around the brewer.

Some agitation helps wet the bed and improve mixing.

Too much can make certain coffees stall by redistributing fines and changing the structure of the bed.

If a brew is very slow and you use strong stirring or repeated vigorous swirls, reduce the agitation before making a large grind change.

The useful goal is controlled, repeatable agitation—not the maximum possible movement.

Can I copy a grinder setting from the internet?

You can use it as a starting point if the grinder model and calibration are genuinely comparable.

Do not treat it as a measurement standard.

Even within one grinder model, differences can come from:

  • calibration
  • burr alignment
  • burr wear
  • manufacturing tolerances
  • coffee
  • how the grinder is operated

If somebody says “use setting 18”, the most useful interpretation is:

this is approximately where that person started on that grinder for that coffee and recipe.

Your cup still decides whether the setting is correct.

Are micron charts useful?

They can be useful for describing an approximate region, but they should not be treated as a universal calibration system.

A ground-coffee sample is a distribution of particle sizes, not one particle diameter.

Two grinders can share a similar median or peak size while having very different amounts of fines and large particles.

So a statement such as “pour-over should be exactly X microns” creates false precision.

Visual comparisons to sand, salt or sugar have the same limitation. They can help a beginner find the right neighbourhood, but they cannot replace brewing and tasting.

Burr grinder or blade grinder for pour-over?

A burr grinder is usually the better tool for repeatable pour-over brewing.

It allows you to change the distance between grinding surfaces in a controlled way and return to a previous setting.

Blade or impact grinders can still make coffee, but they tend to give you much less direct control over the final particle distribution.

That does not mean every burr grinder produces the same quality of grind.

Burr design, alignment, mechanical stability and the rest of the grinder all matter.

Flat burr or conical burr for pour-over?

Neither label guarantees a particular result.

It is too simplistic to say:

  • flat burr always means fewer fines
  • conical burr always means more body
  • flat burr always means clearer coffee

The actual particle distribution depends on the specific burr geometry, alignment, feed, rotational behaviour, coffee and grinder design.

Judge a grinder by the coffee it produces rather than the shape category printed on the specification sheet.

Hand grinder or electric grinder?

Either can produce excellent pour-over coffee.

The coffee bed does not know whether the burr was turned by a motor or by your hand.

The important variables are the grinding mechanism, its stability, adjustment, alignment and resulting particle distribution.

A good hand grinder can outperform a poor electric grinder for pour-over.

Steel or ceramic burrs?

Material alone is not enough to predict grind quality.

Steel and ceramic burrs can both be used successfully.

Tooth geometry, alignment, manufacturing quality and overall grinder design are more informative than a blanket rule that one material must produce better pour-over grounds.

Is freshly ground coffee always better?

Grinding immediately before brewing usually protects aroma, so fresh grinding is a strong default.

But freshness and grind quality are separate variables.

A very poor grinder can produce such an uneven particle distribution that carefully pre-ground coffee from a much better grinder may sometimes brew more evenly for a limited period after grinding.

That does not make old pre-ground coffee preferable in general. It simply shows why “freshness” and “quality of grinding” should not be confused as the same variable.

A simple pour-over grind-size method

  1. Choose a repeatable recipe. Keep dose, water, filter, brewer and pouring pattern steady.
  2. Start medium-fine to medium. Use the grinder's own suggested filter range only as a first approximation.
  3. Brew once without chasing the clock.
  4. Taste first. Decide whether the cup is weak, sharp, balanced, sweet, bitter, dry or rough.
  5. Use drawdown as supporting evidence. Fast, slow, steady or stalling all tell you something, but none is a verdict on its own.
  6. Move the grind a small amount. Finer if the cup and flow suggest too little effective extraction; coarser if resistance and harshness suggest the grind is too restrictive.
  7. Repeat. Once the coffee tastes good, record the setting and brew time as your own baseline for that coffee.
