What Is the Golden Ratio for Pour-Over Coffee?

Quick answer: There is no single universal “golden ratio” for pour-over coffee. A very useful starting point is about 60 g of coffee per litre of brew water, which is roughly 1:16.7. That means 15 g of coffee with 250 g of water, 18 g with 300 g, or 30 g with 500 g.

The Specialty Coffee Association has also used 55 g/L as a starting reference in its brewing standards and certification testing, which is about 1:18.2. These numbers are not contradictory. They are starting points for different brewing targets, not laws of coffee.

The important idea is this: brew ratio mainly sets the strength framework of the drink; grind, contact, agitation, filter and brewer determine how that recipe actually extracts.

What does a coffee ratio like 1:16 actually mean?

A ratio such as 1:16 means:

1 gram of dry coffee for every 16 grams of brew water.

So:

  • 15 g coffee at 1:16 = 240 g water
  • 18 g coffee at 1:16 = 288 g water
  • 20 g coffee at 1:16 = 320 g water
  • 30 g coffee at 1:16 = 480 g water

For pour-over, it is easiest to measure both coffee and water by mass on a scale. In ordinary brewing practice, one gram of water is close enough to one millilitre that recipes often move comfortably between the two, but grams are more repeatable.

When someone says 60 g/L, they are expressing the same basic idea in another form:

60 g coffee for 1,000 g of water ≈ 1:16.7.

These are useful starting points, not three quality grades.

In broad terms, the 55 g/L recipe will usually produce a less concentrated beverage than 60 or 65 g/L if the rest of the system behaves similarly. But changing ratio can also change the physical brew, especially when you change the amount of coffee in the brewer.

Is 1:16 or 1:17 better for pour-over?

Neither is universally better.

A ratio near 1:16 to 1:17 is a practical place to start because it tends to produce a useful strength range for many filter-coffee recipes.

But the correct question is not “Which number wins?” It is:

“Which ratio gives me the strength I like while allowing this coffee to extract well in this brewer?”

If 1:16 tastes balanced but too concentrated, moving toward 1:17 may make the cup more comfortable without requiring a radical change in grind.

If 1:17 tastes balanced but too light for your preference, moving toward 1:16 may be enough.

The difference is subtle but meaningful. On 300 g of water:

  • 1:16 uses 18.75 g coffee
  • 1:16.7 uses about 18 g
  • 1:17 uses about 17.65 g

That is why ratio is best treated as a dial rather than a commandment.

What does the SCA actually mean by Golden Cup?

The phrase “golden ratio” is often mixed up with the Specialty Coffee Association's Golden Cup guidance.

They are related ideas, but they are not the same claim.

SCA brewing best-practice documents have recommended a coffee-to-water ratio of 55 g/L ± 10%. Its certified home brewer testing begins at 55 g/L and then adjusts grind and contact time as needed to produce coffee within specified strength and extraction ranges.

That tells us something important:

Even the standard is not built around one magic ratio operating independently of grind, contact time and extraction.

Golden Cup is about the relationship between beverage strength and extraction, with brew ratio being one of the variables used to get there.

So it is misleading to say:

“The SCA says the one correct ratio is 1:18.”

A better interpretation is:

“SCA standards use roughly 55 g/L as a reference point within a broader brewing system.”

Why do many modern pour-over recipes use around 60 g/L?

Because it is practical, memorable and sits in a useful strength range for many coffees.

For example:

  • 15 g coffee + 250 g water = 60 g/L
  • 18 g + 300 g = 60 g/L
  • 24 g + 400 g = 60 g/L
  • 30 g + 500 g = 60 g/L

It also scales cleanly and is common in contemporary manual-brewing recipes.

That makes 60 g/L an excellent default starting point, particularly when you are learning a new coffee or brewer.

It should still be treated as a starting point. Coffee preference is not universal, and modern sensory research has found that consumers do not all converge on one identical strength-and-extraction target.

Ratio, strength and extraction are different things

This is the most important part of the subject.

Coffee conversations often use ratio, strength and extraction as if they mean the same thing. They do not.

Brew ratio

The relationship between dry coffee and brew water.

Example: 18 g coffee + 300 g water = about 1:16.7.

Beverage strength

How concentrated the finished drink is — how much dissolved coffee material is present relative to the liquid.

This is commonly measured as total dissolved solids, or TDS.

Extraction

How much soluble material was removed from the dry coffee grounds during brewing.

A coffee can be:

  • strong in concentration but poorly extracted
  • weak in concentration but well extracted
  • strong and well extracted
  • weak and poorly extracted

The variables interact, but they are not interchangeable.

This is why adding more coffee does not simply mean “more extraction.” It may make the beverage stronger while also changing bed depth, resistance and how evenly water moves through the brewer.

Does more coffee make pour-over stronger?

Usually, yes, if the amount of brew water stays the same.

If you move from 18 g to 20 g of coffee while keeping 300 g of water:

  • 18 g / 300 g ≈ 1:16.7
  • 20 g / 300 g = 1:15

The second recipe uses more coffee relative to the water and will generally produce a more concentrated drink.

But the physical bed is also deeper. That can change resistance, drawdown and extraction behaviour.

So changing dose is not a perfectly isolated “strength only” adjustment.

Does using more water make coffee weaker?

Usually, yes — but again, the extraction may also change.

If you keep 18 g of coffee and change the water:

  • 18 g + 270 g water = 1:15
  • 18 g + 300 g = 1:16.7
  • 18 g + 324 g = 1:18

The 1:18 version generally produces a less concentrated beverage than the 1:15 version.

However, the extra brew water also continues passing through the coffee bed, so it can remove additional soluble material.

This is an excellent example of why strength and extraction must be kept separate.

Why final beverage weight is not the same as brew water

If you pour 300 g of water over 18 g of coffee, you will not normally collect 300 g of beverage.

The spent coffee grounds retain a meaningful amount of water, and a small amount may also remain in the filter and brewer.

For normal pour-over recipes, the quoted coffee-to-water ratio usually refers to water added to the brewer, not the final beverage mass in the cup.

So when calculating 1:16, 1:17 or 60 g/L, use the brew water specified by the recipe unless it explicitly tells you otherwise.

Does bloom water count in the coffee-to-water ratio?

Yes.

If your recipe is 15 g coffee and 250 g total water, and you use 50 g for the bloom, that 50 g is part of the 250 g.

You do not add 250 g after the bloom.

The recipe might look like:

  • 50 g bloom
  • then additional pours bringing the scale to 250 g total

The final brew ratio is still 15:250, or about 1:16.7.

What about bypass water added after brewing?

Bypass changes the final beverage differently from water that travels through the coffee bed.

If you brew a concentrated pour-over with 250 g of water and then add 50 g of hot water directly to the cup, the extra 50 g dilutes beverage strength without passing through the grounds.

That means there are now two useful numbers:

  • the brewing ratio through the coffee bed
  • the final dilution or beverage ratio

This is why bypass recipes should state their water clearly rather than describing everything with one ambiguous ratio.

How should I adjust ratio by taste?

Start around 60 g/L, brew carefully, then separate strength problems from extraction problems.

The coffee tastes balanced but too strong

This is where ratio is especially useful.

Use slightly more water or slightly less coffee.

For example, if 18 g / 300 g tastes balanced but too concentrated, try 18 g / 315 g or 18 g / 320 g before rebuilding the entire recipe.

The coffee tastes balanced but too weak

Use slightly less water or slightly more coffee.

If 18 g / 300 g is clean and balanced but simply too light, try 18 g / 285–290 g or modestly increase the dose.

The coffee tastes sour or undeveloped

Do not immediately assume the ratio is wrong.

Sourness can indicate insufficient or uneven extraction. Grind, water temperature, wetting, agitation and flow may deserve attention first.

The coffee tastes bitter, rough or drying

Again, ratio is only one possibility.

A very concentrated coffee can intensify those sensations, but bitterness or astringency can also come from roast character, uneven extraction, excessive fines migration or an unsuitable grind.

Weakening the drink may make it easier to drink without fixing the underlying brew.

Should I change ratio before changing grind?

It depends on what you are trying to fix.

If the coffee tastes well balanced but too strong or too weak, ratio is the logical adjustment.

If the strength feels appropriate but the flavour is sour, hollow, harsh or drying, grind and extraction behaviour are often more informative first levers.

A useful rule is:

Use ratio to tune concentration. Use grind and brewing technique to tune extraction — while remembering that all of them interact.

Does ratio affect brew time?

Yes, especially if you change the coffee dose.

More coffee in the same brewer usually creates a deeper bed, which can increase resistance and extend drawdown.

Less coffee usually creates a shallower bed, which can reduce resistance.

If instead you keep the dose constant and change only the water, bed depth stays more similar, but total pouring and contact time may change.

That is why ratio changes should be recorded alongside brew time rather than treated as an isolated flavour setting.

Should light and dark roasts use different ratios?

They can, but there is no universal rule saying a roast colour must use a particular ratio.

Roast development changes how readily coffee extracts and how it tastes. Some brewers therefore prefer slightly different ratios for different roasts.

But ratio is only part of the recipe. Grind and water temperature are often equally or more useful when adapting to a coffee that extracts very easily or with difficulty.

Start from a repeatable ratio and change one variable at a time.

What ratio should I use for a V60?

A good first recipe is around 60 g/L.

  2. Use a consistent grinder setting, paper, brewer and pouring pattern.
  3. Taste the coffee after it cools a little.
  4. Ask whether the problem is strength or extraction.
  5. If balanced but too strong, weaken the ratio slightly.
  6. If balanced but too weak, strengthen the ratio slightly.
  7. If the flavour itself is undeveloped or harsh, investigate extraction before chasing the ratio.
  8. Change one variable at a time and record the result.

This produces something much more useful than a universal golden ratio:

a repeatable ratio that suits your coffee, equipment and taste.
