Santoku 170
Nashiji is een traditionele mesafwerking, geïnspireerd op de Japanse perenhuid. Elk mes wordt met de hand gesmeed en gehamerd met behulp van een eeuwenoude techniek om deze look te bereiken. Ieder mes is anders, omdat het voor velen onmogelijk is om met opzet een identiek patroon te hanteren.
Het kernstaal is blauw papierstaal (Aogami #2). Dit verwijst naar het oude systeem voor het classificeren van staal in Japan, niet naar de kleur van het staal. Het is vergelijkbaar met het oudere witte papierstaal (Shirogami) met de toevoegingen van wolfraam en chroom. Dit resulteert in harder staal, beter randbehoud en kleinere brosheid.
De buitenste lagen zijn ook van traditioneel koolstofstaal. Was het mes alleen met de hand en olie het in met keukenolie, zodat het tientallen jaren meegaat!
De handgrepen zijn gemaakt van natuurlijk walnotenhout en zijn ook met de hand gevormd met behulp van schuurpapier. Dankzij de naadloze bediening in verschillende posities past dit mes uitstekend in elke hand.
Santoku is voor veel chef-koks dé stijl. Het is een multifunctioneel Japans mes, ideaal voor groenten, vlees of vis.
De messen worden gesmeed, geslepen, getest en individueel verpakt in de Tadafusa Open Factory in Sanjo, Niigata.
