Traditionele Gyutou 210mm gemaakt door Tadafusa Hamono in Sanjo, Niigata.
Elke smid heeft zijn eigen Tsuchime-patroon. Onze Tsuchime is gebaseerd op een geometrisch diamantpatroon, dat sinds oudsher bekend is in Japan.
Dit is een gelaagd SLD-staal (halfroestvrij), waardoor het gemakkelijk te slijpen is en een goede snijrand behoudt.

Opmerkingen:
Zorg voor het mes door het met de hand te wassen en regelmatig te oliën. SLD is een halfroestvrij staal. Het bevat chroom, waardoor het beter bestand is tegen roest in vergelijking met Aogami- en Shirogami-stalen.
